Irish food: traditional

The one thing the Irish seem to be known for is potatoes and although not an Irish plant, potatoes have become a staple part and traditional part of the Irish diet.

Traditional Irish food is not amazingly healthy, something that spreads itself through the whole of Ireland and the UK. Food is heavy sometimes fatty and boiled to death! This may have something to do with the sometimes depressing climate.

However Irish food in the traditional sense can be extremely nice.

Two potato dishes that I particularily enjoy are Colcannon and Champ.

Colcannon is basicly mashed potato made with butter and salt with added garlic.

Champ is much the same but with chooped spring / green onions instead of garlic.

I am a vegetarian so the traditional dish of champ with sausages and gravy isn't something I can have. I have however made it with Quorn sausages and onion gravy before and had a very nice alternative.
