Salmon topped with mushrooms and cheese

This very simple recipe is very very nice. In fact it's so nice that after making it for the head chef at work she now wants it on the menu.

It's an adaptation of a Polish recipe.

Ingredients (Serves 4):
4 portions of salmon (you can use other fish if you prefer)
8 heaped spoons of white mushrooms
8 heaped spoons of sour cream
1 tablespoon of butter
4 handfuls of grated cheese (Chedder, or Swiss are good)
Lemon Juice
Paprika

Instructions:

  • Melt the butter in a skillet at medium heat
  • Fry the mushrooms lightly until there is no liquid left in the pan
  • Squeeze lemon juice over the salmon portions
  • Broil the salmon for 6-8mins until it is cooked all the way through
  • Evenly spread the cooked mushrooms over the salmon portions
  • Spread 2 heaped spoons of sourcream over each portion
  • Add grated cheese to top of each portion
  • Sprinkle a fair amount of paprika on top of the cheese
  • Place the portions back in the oven for another 4-6 mins until the cheese is just browning

Serve with your favorite sides and enjoy!

It is delicious. I had Italian style roasted tofu and vegetables with poached salmon today but ALMOST made the cheese salmon recipe again!! If I eat it too often it may loose it's yumminess so I will try and stay away from it!!

Let me know how you find making it and more importantly eating it :)

That looks so good! I love anything with sour cream in it.

I have salmon in the freezer that I have no idea what to do with so I found this recipe just in time! :)
